Beansprouts,
sprouted seeds and pulses otherwise known as 'sprouts' are so easy
and versatile to use in many delicious recipes. They are fantastic
as healthy salad and sandwich ingredients, excellent for vegetarian
or vegan meals, such as dips, houmous, soups and casseroles. They
are popular in Indian, Chinese, Mexican and Korean cuisine in tasty
dishes such as falafel and bhel puri.
Sprouts need no preparation other than a rinse. Best eaten raw, they are quick and easy to use straight from your fridge. As sprouts are not cut and are still living, their cell walls remain intact, so do their nutrients and they remain fresh and delicious with a crunchy texture throughout their shelf life. Sprouts are fast food at its very best!
Enjoy our recipes, but create your own too. Sprouts make delicious sandwich fillings. They are ideal for filling fajitas and wraps, for adding to stir-fries, sprinkling on soups, stirring into casseroles
the perfect ingredient to enhance your healthy diet.
As for salads ... well, assembling a salad is a gentle and creative art. Enjoy it and remember that sprouted seeds and pulses suggest themselves for salads of every kind. Generally, the sprouted beans and pulses go well in salads with creamy dressings made with tofu, yoghurt or mayonnaise, whereas the 'light' sprouted seeds like alfalfa and sango radish need little or no dressing and are great additions and add flavour to any green or mixed salad.
Our sunflower sprouts are so nutty and delicious, they go well with our sweet crunchy Mung Bean sprouts with fresh orange pieces, walnuts and raisins for a super energy fruit and nut salad.
The beansprouts are super for making vegetarian dips and our chickpea sprouts make a wonderful raw houmous which is so easy to make. Blend a packet of our fresh organic chickpea sprouts with tahini, orange & lemon juice, vegetable stock and garlic to taste for a nutritious raw houmous.

Try blending the raw mixed sprouts with fresh advocado, lemon juice and fresh coriander.

Alfalfa
and Tomato Salad
Lift
a classic tomato salad with Aconbury alfalfa sprouts. Serve
with sliced mozzarella and char-grilled bruschetta for an
informal starter.
1
pack Aconbury alfalfa, or alfalfa and broccoli sprouts
500g ripe plum tomatoes
20g fresh basil leaves
2 tbsp virgin olive oil
1 tbsp balsamic vinegar
Sea salt and freshly ground black pepper
Roughly
chop the tomatoes and tear up the basil. Combine with the
oil, vinegar and seasoning, and set aside for an hour for
the flavours to blend. Layer with the alfalfa sprouts, decorating
with a few on top, and serve.

Kitchadi
Rice with Mixed Sprouts
Like a comforting risotto, this Indian dish
immediately became a firm favourite -
Serves 4
Ingredients:
2 cups brown rice
1 pack Aconbury Mixed Sprouts
1 tbsp bouillon powder
½ cup cashew nuts
½ cup raisins
1 tsp cumin seeds
1 tsp fenugreek seeds
½ teaspoon black pepper
5 cups water
2 tbsp butter
2 tbsp fresh chopped coriander leaves
yoghurt to serve
Method:
Melt the butter.
Add the bouillon powder, cashew nuts, raisins, cumin and fenugreek
seeds and black pepper, and sauté for 5 minutes.
Stir in the rice and water, bring to the boil and simmer for
35 minutes.
Mix in the sprouts and fresh coriander leaves and heat through.
Serve with salads and yoghurt.
